  • 1 cup Cucumber Diced English cucumbers work best.
  • 1 cup Bell Pepper Mix different colors for visual appeal.
For the Dressing
  • 1/2 cup Italian Dressing A homemade version is recommended.
  • 1 tsp Garlic Minced fresh garlic is best.
  • Salt & Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water over high heat. Add 8 oz of short pasta and cook until al dente, about 8-10 minutes. Drain the pasta and cool completely.
  2. Chop 1 cup of cherry tomatoes, 1 cup of diced cucumber, and 1 cup of diced bell pepper into bite-sized pieces. Place in a large mixing bowl.
  3. Add the cooled pasta to the bowl with the chopped vegetables. Sprinkle in 1 tsp of minced garlic and mix gently.
  4. Pour 1/2 cup of Italian dressing over the mixture and toss to coat evenly.
  5. Transfer the salad to an airtight container or cover the mixing bowl and refrigerate for at least 30 minutes.
  6. Before serving, taste and adjust the seasoning with salt and pepper as needed. Serve chilled.
