- Boil a large pot of salted water over high heat. Add 8 oz of short pasta and cook until al dente, about 8-10 minutes. Drain the pasta and cool completely.
- Chop 1 cup of cherry tomatoes, 1 cup of diced cucumber, and 1 cup of diced bell pepper into bite-sized pieces. Place in a large mixing bowl.
- Add the cooled pasta to the bowl with the chopped vegetables. Sprinkle in 1 tsp of minced garlic and mix gently.
- Pour 1/2 cup of Italian dressing over the mixture and toss to coat evenly.
- Transfer the salad to an airtight container or cover the mixing bowl and refrigerate for at least 30 minutes.
- Before serving, taste and adjust the seasoning with salt and pepper as needed. Serve chilled.
