Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper.
  2. In a medium bowl, combine 4 large eggs, 1/2 cup of honey, 1/3 cup of olive oil, and 1 teaspoon of vanilla extract. Whisk until smooth.
  3. In another bowl, stir together 2 cups of almond flour, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground cardamom, 1/4 teaspoon of salt, and 1 teaspoon of baking soda.
  4. Fold the dry mixture into the wet ingredients until a thick, creamy batter forms.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake for 25-30 minutes, testing for doneness with a toothpick.
  7. While the cake bakes, prepare the drizzle by combining 1/2 cup of honey, 1/4 cup of water, and 1 tablespoon of lemon juice in a small saucepan over low heat. Stir until honey dissolves.
