- Prepare the Medjool dates by slicing them open lengthwise and removing the pit.
- Mix melted coconut butter and shredded coconut in a bowl until creamy.
- Stuff each date with about half a tablespoon of the coconut mixture and press a roasted almond inside.
- Melt dark chocolate chips and coconut oil together over low heat until smooth.
- Dip each stuffed date in the melted chocolate and place on parchment paper.
- Chill the dates in the freezer for about 10 minutes until the chocolate hardens.
