Activation and Dough Preparation
- Begin by heating warm water between 105°F and 115°F. Stir in the sugar and yeast, allowing it to froth for about 5 minutes.
- In a stand mixer, combine the warm apple cider, melted butter, beaten eggs, and activated yeast mixture. Gradually add flour, cinnamon, and salt, mixing until a soft dough forms, then knead with a dough hook for about 5 minutes.
Rising and Filling Preparation
- Transfer dough to a greased bowl, cover, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
- Heat 2 tablespoons of butter in a skillet, sauté diced apples for 5 to 7 minutes. Mix in cornstarch, cinnamon, salt, and apple cider, cooking until thickened. Allow cooling.
Cinnamon Filling and Assembly
- Blend softened butter with brown sugar and cinnamon until smooth.
- Roll the dough into a rectangle, spread cinnamon filling, add cooled apple mixture, roll tightly, and cut into 12 pieces.
Final Rise, Baking, and Icing
- Place sliced rolls in a greased pan to rise again for about 30 minutes.
- Melt 6 tablespoons of butter until browned and nutty. Cool for icing.
- Mix browned butter with cream cheese and icing sugar until creamy.
- Preheat oven to 350°F and bake rolls for 25 to 35 minutes.
- Let the rolls cool slightly and generously spread the icing over warm rolls.
