Baked Lemon Donuts Instructions
  1. Preheat your oven to 350°F (175°C) and spray the donut and mini muffin pans with cooking spray.
  2. In a mixing bowl, combine the egg, granulated sugar, Greek yogurt, canola oil, lemon zest, and lemon extract. Whisk until smooth.
  3. Fold in the flour, baking powder, baking soda, and salt until just incorporated.
  4. Divide the batter evenly among the prepared pans, filling each about three-quarters full.
  5. Bake for 13-16 minutes until lightly golden and springy to the touch.
  6. Cool in the pans for about 5 minutes before removing.
  7. In a separate bowl, whisk the confectioners' sugar and lemon juice until smooth.
  8. While warm, dip the donut tops into the glaze and set on a wire rack.
