Baked Lemon Donuts Instructions
- Preheat your oven to 350°F (175°C) and spray the donut and mini muffin pans with cooking spray.
- In a mixing bowl, combine the egg, granulated sugar, Greek yogurt, canola oil, lemon zest, and lemon extract. Whisk until smooth.
- Fold in the flour, baking powder, baking soda, and salt until just incorporated.
- Divide the batter evenly among the prepared pans, filling each about three-quarters full.
- Bake for 13-16 minutes until lightly golden and springy to the touch.
- Cool in the pans for about 5 minutes before removing.
- In a separate bowl, whisk the confectioners' sugar and lemon juice until smooth.
- While warm, dip the donut tops into the glaze and set on a wire rack.
