  • 2 cups Sweet potatoes Cubed

  • 1 cup Corn Frozen or canned, rinsed and drained
  • 1 cup Black beans Or chickpeas for a twist
  • 1 piece Avocado Sliced
For the Dressing
  • 1/2 cup Ranch or cilantro lime dressing For drizzling
For the Base
  • 4 cups Greens or grains (rice/quinoa) For the base

Method
 

Preparation
  1. Preheat your grill or oven to medium-high heat. Season the chicken breasts with BBQ sauce.
  2. Grill the chicken for about 6–7 minutes on each side until cooked through and caramelized.
  3. Peel and cut sweet potatoes into cubes, toss with olive oil, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet and roast at 425°F (220°C) for 25–30 minutes until golden brown.
  5. Construct the bowls starting with a base of greens or grains, top with sliced chicken and roasted sweet potatoes.
  6. Add corn, black beans, avocado, and drizzle with dressing.
  7. Serve immediately and enjoy with lime wedges if desired.
