Ingredients
  

For the Salad Base
  • 4 cups spring salad mix can be swapped with spinach or mixed greens
  • 2 cups butter lettuce can replace with Bibb lettuce
For the Crunch
  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 1 cup sugar snap peas confirm they are snap peas, not snow peas
  • 4-5 pieces radishes thinly sliced
  • 1 cup frozen peas thawed and drained before use
For Creaminess
  • 1 piece ripe avocado diced
  • ½ cup goat cheese or feta, if preferred
For Extra Flavor
  • 2 pieces green onions chives can be a substitute
For the Crunchy Toppings
  • 4 slices thick-cut bacon can substitute turkey bacon or omit for vegetarian
  • ¼ cup sunflower seeds roasted and salted
  • ¼ cup sliced almonds can use pecans or walnuts as alternatives
For the Dressing
  • ¼ cup fresh lemon juice
  • ¼ cup chopped basil
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon oregano
  • ½ cup extra virgin olive oil
  • salt and pepper to taste

Method
 

Making the Dressing
  1. In a blender, combine fresh lemon juice, chopped basil, green onions, garlic, Dijon mustard, honey, oregano, salt and pepper. Gradually pour in olive oil until smooth and emulsified. Chill for at least 15 minutes.
Mixing the Greens
  1. In a large salad bowl, combine spring salad mix and lightly torn butter lettuce. Gently toss.
Preparing the Vegetables
  1. Add trimmed asparagus, sugar snap peas, thawed frozen peas, and thinly sliced radishes to the greens.
Adding Creamy Ingredients
  1. Dice avocado and fold it into the mixture along with crumbled goat cheese.
Incorporating the Crunchy Toppings
  1. Cook bacon until crispy, crumble over the salad, and sprinkle with sunflower seeds and sliced almonds.
Adding Dressing and Tossing
  1. Drizzle chilled dressing over the salad, toss gently to coat everything.
