Preparation Steps
- Preheat oven to 350°F (175°C) and prepare a 9-inch springform pan.
- In a large bowl, combine flour, baking powder, salt, granulated sugar, brown sugar, and optional lemon zest.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add eggs and vanilla; stir to combine, then press two-thirds into the bottom of the pan.
- In another bowl, mix mascarpone, caster sugar, corn starch, eggs, and vanilla until smooth.
- Spread half of the cheesecake filling over the crust; sprinkle with blueberries and pour remaining filling on top.
- Top with remaining crumb mixture evenly, then bake for 65-75 minutes until golden brown.
- Cool in the pan for 15 minutes, then remove and cool completely.
- Drizzle with glaze made from powdered sugar and milk before serving.
