Method
 

Dough Preparation
  1. Mix warm water, sugar, and Platinum Yeast in a bowl. Let sit for 5 minutes until bubbly.
  2. Gradually add 3 cups of flour, then whisk in eggs, canola oil, and salt before combining.
  3. Incorporate additional flour until sticky and knead for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled.
Filling Preparation
  1. Blend softened cream cheese, sugar, and vanilla in a medium bowl until smooth. Set aside.
Shaping and Braiding
  1. Punch down risen dough and divide into 9 pieces. Roll each into a rectangle.
  2. Spread cream cheese filling on rectangles, add blueberries, roll tightly, and seal edges.
  3. Braid three filled ropes together and place on a baking sheet. Let rise for 30 minutes.
Baking
  1. Preheat oven to 375°F. Brush loaves with egg wash and sprinkle coarse sugar and almonds before baking.
  2. Bake for 20 minutes, rotate trays, then bake for an additional 15-20 minutes until golden brown.
Cooling and Serving
