For the Dressing

  • 1/2 teaspoon Sugar Consider maple syrup for a vegan alternative
  • 1/2 teaspoon Chinese Black Vinegar Rice wine vinegar can work too
  • 1/4 teaspoon White Pepper Black pepper can be substituted
  • 2 teaspoons Water Thins the dressing
  • Salt Enhances flavor as desired; may omit if soy sauce is salty enough

Method
 

Directions
  1. Begin by carefully draining the silken tofu, then place it on a cutting board. Thinly slice the tofu into small squares, about half an inch thick.
  2. Next, take a ripe avocado, cut it in half, and remove the pit. Slice the avocado crosswise into thin pieces.
  3. On a serving platter, alternate the slices of tofu and avocado until the platter is filled.
  4. In a mixing bowl, combine grated garlic and ginger with light soy sauce, sesame oil, sugar, Chinese black vinegar, and white pepper. Stir in two teaspoons of water.
  5. Drizzle the prepared dressing evenly over the arranged tofu and avocado slices.
  6. Sprinkle the finely chopped scallions on top of your salad and serve immediately.
