Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
  2. In a saucepan over medium heat, melt 9 tablespoons of salted butter while stirring until golden brown (about 5-7 minutes).
  3. In a mixing bowl, whisk together the brown butter, brown sugar, granulated sugar, egg, heavy cream, and vanilla until smooth.
  4. In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually add to the wet ingredients.
  5. Fold in 3/4 cup semi-sweet chocolate chips into the dough gently.
  6. Toast 3 cups of kataifi with 2 tablespoons of salted butter in a skillet for about 3-5 minutes until golden and crispy.
  7. Combine the toasted kataifi with 1 cup of pistachio cream until mixed well.
  8. Press half of the cookie dough into the bottom of the pan, layer with kataifi mixture, and top with remaining dough.
  9. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. Allow the bars to cool completely before lifting out with parchment and cutting into squares.
