- Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
- In a saucepan over medium heat, melt 9 tablespoons of salted butter while stirring until golden brown (about 5-7 minutes).
- In a mixing bowl, whisk together the brown butter, brown sugar, granulated sugar, egg, heavy cream, and vanilla until smooth.
- In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually add to the wet ingredients.
- Fold in 3/4 cup semi-sweet chocolate chips into the dough gently.
- Toast 3 cups of kataifi with 2 tablespoons of salted butter in a skillet for about 3-5 minutes until golden and crispy.
- Combine the toasted kataifi with 1 cup of pistachio cream until mixed well.
- Press half of the cookie dough into the bottom of the pan, layer with kataifi mixture, and top with remaining dough.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Allow the bars to cool completely before lifting out with parchment and cutting into squares.
