  • 1 tbsp Cornstarch/Potato Starch adds crunch.
  • 1/3 tsp Salt enhances flavor.
  • 1/3 tsp Pepper adjust for spice.
  • 4 cups Cooking Oil for deep frying.
  • 1 tsp Chili Powder optional for spice.

  • 1 Ketchup for dipping.

Method
 

Preparation Steps
  1. Begin by thoroughly washing the two large potatoes under cold water to remove any dirt.
  2. Using a sharp knife, make a shallow cut around the middle of each potato.
  3. Place the prepared potatoes in a large pot of salted water and bring to a boil over high heat.
  4. Let them cook for about 30 minutes or until tender.
  5. Remove the potatoes and transfer them into a bowl of iced water for 5 minutes.
  6. Peel the cooled potatoes.
  7. Mash the peeled potatoes in a large bowl until smooth.
  8. Combine the smooth mashed potatoes with rice flour, cornstarch, salt, and pepper.
  9. Knead the mixture until it forms a dough.
  10. Divide the dough into equal portions and roll into log shapes.
  11. Cut them into pillow shapes and press down with a fork.
  12. Heat oil in a deep pot until it reaches 350°F.
  13. Fry the pillows in batches for about 5 minutes until light golden.
  14. Increase the oil temperature and fry for an additional 30 seconds.
  15. Drain on paper towels and serve hot with dipping sauces.
