Preparation Steps
- In a medium bowl, whisk together ½ cup of your favorite hot sauce and ¼ cup of melted unsalted butter until fully combined.
- Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
- Add 1 pound of boneless, skinless chicken breasts seasoned with salt and pepper. Sauté for 5-7 minutes.
- Reduce the heat to medium and pour the prepared buffalo sauce into the skillet over the cooked chicken.
- Cook 2 cups of your choice of rice according to package instructions.
- Carefully spoon the buffalo chicken mixture over the warm rice.
- Top each bowl with shredded lettuce and halved cherry tomatoes.
- Sprinkle shredded cheddar cheese over each bowl.
- Garnish with sliced green onions and optional avocado slices.
