For the Filling
  • 2 cups Shredded Chicken Can use rotisserie chicken
  • 1/2 cup Buffalo Sauce Adjust for spice preference
  • 1 cup Mozzarella Cheese Use fresh or low-moisture
For the Breading
  • 1 cup All-Purpose Flour
  • 2 large Eggs Beaten
  • 2 cups Panko Breadcrumbs Season for extra flavor
For Frying
  • Oil as needed Cooking Oil High smoke point, e.g. canola oil
For Dipping
  • as desired Dipping Sauces e.g. ranch or blue cheese

Method
 

Preparation
  1. In a large bowl, combine shredded chicken, buffalo sauce, and mozzarella cheese until cohesive.
  2. Shape mixture into 3-inch long sticks and freeze on a parchment-lined baking sheet for at least 30 minutes.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
  4. Coat each frozen stick in flour, then egg, then breadcrumbs.
  5. Heat oil in a heavy frying pan to 350°F.
  6. Fry sticks in batches for 2-4 minutes until golden brown.
  7. Drain fried sticks on paper towels and serve hot.
