Step-by-Step Instructions
- In a medium bowl, combine 3 tablespoons of miso paste, 2 tablespoons of mirin, 2 tablespoons of sake, 1 tablespoon of brown sugar, and 1 tablespoon of soy sauce. Whisk together until smooth and well-blended.
- Place the black cod fillets in a shallow dish and coat them with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat. Prepare a baking sheet or oil the grill grates.
- Remove the black cod from the marinade and place on the baking sheet or grill. Cook for 12-15 minutes in the oven or 5-7 minutes per side on the grill.
- Let the fish rest for about 3 minutes. Serve with a drizzle of reserved marinade and pair with jasmine rice or sautéed greens.

Notes
For best flavor, marinate overnight. Use high-smoke oil if grilling and check internal temperature for safety.
