- Place eggs in a medium saucepan and cover them with cold water by at least an inch. Bring to a boil, then cover and let sit for 12 minutes.
- Cool eggs under cold running water or in an ice bath before peeling.
- In a mixing bowl, mash the yolks with mayonnaise, Dijon mustard, hot sauce, and spices until smooth. Chill in the refrigerator.
- Mix any remaining spices, toss shrimp in the mixture, and heat olive oil in a skillet over medium-high heat. Sear shrimp for about 2 minutes per side.
- Remove shrimp to cool. Pipe yolk mixture into egg whites.
- Top each deviled egg with a shrimp, jalapeño slice, and chives. Serve with lemon wedges.
