Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine softened butter, cream cheese, vanilla extract, and powdered sugar. Use an electric mixer to whip until smooth and creamy, about 2–3 minutes. Gently fold in whipped cream and diced fruits, leaving some berries aside for later.
  2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the mixture.
  3. Take a soft tortilla and spread about ¼ cup of the chilled cheesecake fruit filling evenly. Sprinkle reserved raspberries on top, then tightly roll from one end to the other.
  4. Mix together cinnamon and granulated sugar in a small bowl. Brush the outside of each rolled tortilla with melted unsalted butter, then roll in the cinnamon-sugar mixture.
  5. Using a sharp knife, slice each roll into 2/3 to 3/4 inch rounds and arrange on a serving tray. Serve immediately or refrigerate for a while and enjoy chilled.
