  • 8 oz Mushrooms any variety, cremini or button
  • 1 cup Cheese (e.g., mozzarella) can substitute with cheddar or feta
  • 1 tsp Garlic Powder adjust based on taste
  • 1 tsp Salt adjust based on taste
  • 1 tsp Pepper adjust based on taste
For the Pitas
  • 4 pieces Pita Bread whole wheat or gluten-free if desired
For the Tzatziki Sauce
  • 1 cup Greek Yogurt can swap with sour cream
  • 1 medium Cucumber finely chopped or grated
  • 2 cloves Garlic adjust the amount for milder flavor
  • 2 tbsp Lemon Juice freshly squeezed
  • 1 tsp Salt be cautious, especially with pre-seasoned yogurt

Method
 

Preparation
  1. In a mixing bowl, combine Greek yogurt, finely chopped cucumber, minced garlic, lemon juice, and a pinch of salt. Stir until blended. Cover and refrigerate for 15 minutes.
  2. Heat a large skillet over medium-high heat, add ground beef, and cook for 7-10 minutes until browned. Drain fat, then add chopped mushrooms, salt, pepper, and seasonings. Sauté for 5 minutes until mushrooms are tender.
  3. Sprinkle cheese over the beef and mushroom mixture. Reduce heat to low and stir until cheese melts for 2-3 minutes.
  4. Wrap pita bread in foil and warm in a preheated oven at 350°F (175°C) for 5-7 minutes until soft.
  5. Cut warm pita in half to create pockets. Fill each half with beef and mushroom mixture, then drizzle with tzatziki sauce.
  6. Serve the stuffed pitas warm with a side salad or sweet potato fries.
