  • 1 teaspoon chili powder
  • 0.5 teaspoon kosher salt adjust to taste
  • 1 teaspoon ground cumin
  • 1 cup cooked rice white or brown
  • 0.5 cup salsa verde or your favorite red salsa
  • 2 teaspoons chipotle sauce or minced chipotles in adobo
  • 1.5 cups shredded cheddar cheese and Monterey Jack cheese or any cheese blend
For the Wrapping
  • 4 extra large flour tortillas or whole wheat/gluten-free tortillas

Step-by-Step Instructions
  1. Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Add ground chicken, red bell pepper, chopped onion, and jalapeño. Sauté for 7-8 minutes until cooked.
  2. Stir in garlic powder, chili powder, kosher salt, and ground cumin. Cook for another 1-2 minutes to toast the spices.
  3. Add cooked rice, salsa verde, and chipotle sauce. Mix well and simmer for 3-4 minutes until heated through.
  4. Lay a tortilla flat, sprinkle cheese down the center, add ½ cup of filling, top with more cheese, then fold and roll tightly.
  5. Heat a non-stick skillet over medium heat, place burrito seam-side down, and toast for 3-4 minutes per side until golden and crispy.
  6. Remove from skillet, let cool slightly, cut in half, and serve warm with dips like sour cream or guacamole.
