For the Bake
  • 2 cups Zucchini, diced or yellow squash
  • 1 cup Bell Pepper, diced
  • 1 medium Onion, diced could use shallots or green onions
  • 1 cup Grape Tomatoes, halved or diced larger tomatoes
  • 1 tablespoon Italian Seasoning or fresh basil/oregano
  • 1 teaspoon Garlic Powder or minced fresh garlic
  • 2 cups Mozzarella Cheese, shredded substitute cheddar or dairy-free if needed
  • 2 tablespoons Olive Oil or avocado oil/melted butter
For Serving
  • 2 tablespoons Fresh Parsley, chopped for garnish
  • 1 teaspoon Red Chili Pepper Flakes optional, omit for milder flavor

Directions
  1. Preheat the oven to 375ºF (190ºC). Prepare your baking dish and ingredients.
  2. In a large baking dish, combine diced zucchini, bell pepper, onion, and grape tomatoes. Add Italian seasoning, garlic powder, and half of the mozzarella cheese, then drizzle with olive oil. Toss until well-coated.
  3. Bake uncovered for about 20 minutes, until zucchini is slightly tender.
  4. Remove from oven and add the remaining mozzarella cheese on top. Return to the oven for 10 more minutes until cheese is melted and golden brown.
  5. Let cool for a minute, then garnish with fresh parsley and red chili pepper flakes if desired. Serve immediately.

Notes

For best results, salt zucchini beforehand to draw out moisture and avoid a watery dish. You can sauté the vegetables to enhance flavor and reduce moisture further.
