  2. In a mixing bowl, combine zucchini, 1/2 cup mozzarella, Parmesan, eggs, garlic powder, and Italian seasoning. Season with salt and pepper.
  3. Line a baking sheet with parchment, spread mixture into a rectangle about 1/4-inch thick. Bake for 20–25 minutes until golden brown.
  4. Sprinkle remaining mozzarella on top and bake for an additional 5–7 minutes until melted and bubbly.
  5. Let cool for 5 minutes, slice into sticks, garnish with parsley, and serve warm with dipping sauces.
