Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini and squeeze out as much moisture as possible using a kitchen towel.
  3. In a mixing bowl, combine the flour, baking powder, salt, and garlic powder. Whisk together.
  4. Fold in the zucchini, mozzarella, Parmesan, eggs, olive oil, and optional Italian seasoning until combined.
  5. Knead the dough gently on a floured surface just until it comes together.
  6. Roll the dough into a rectangle about ½ inch thick and cut into strips of ½ to ¾ inch wide.
  7. Arrange the dough strips on the prepared baking sheet, spaced about an inch apart.
  8. Bake for 15-18 minutes, until golden brown and cooked through.
  9. Let cool slightly before serving with marinara or ranch dip.
