- Begin by boiling a large pot of salted water. Once boiling, gently add the lasagna noodles, cooking them for about 8–10 minutes until they're al dente. Drain the noodles and lay them flat on a sheet of parchment paper to cool.
- In a medium bowl, combine the shredded chicken, ricotta cheese, salt, Italian seasoning, onion powder, and garlic powder. Mix thoroughly until all ingredients are well incorporated and creamy.
- Take a lasagna noodle and lay it flat on a clean surface. Spread approximately 3 ounces of the chicken mixture evenly over the noodle and drizzle a spoonful of Alfredo sauce on top. Carefully roll the noodle from the filled end.
- Preheat your oven to 350°F (175°C). Spread about 1/4 cup of Alfredo sauce on the bottom of a 9x13-inch baking dish. Place the assembled roll-ups seam side down in the dish, covering them with the remaining Alfredo sauce.
- Sprinkle the shredded mozzarella and Parmesan cheese evenly over the roll-ups. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes.
- Once out of the oven, let the Chicken Alfredo Lasagna Roll Ups sit for a few minutes before serving.
