Ingredients
  

Marinade
  • 1 cup fresh lime juice freshly squeezed
  • 1/4 cup olive oil adds moisture
  • 1/2 cup chopped cilantro
  • 3 cloves minced garlic fresh preferred
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder adjust for spice tolerance
  • 1 teaspoon salt kosher salt recommended
  • 1/2 teaspoon black pepper freshly ground
Bowl Ingredients
  • 1 pound flank steak substitute with chicken, shrimp, or tofu
  • 2 cups rice use brown or white rice
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh, frozen, or canned
  • 1 cup cherry tomatoes diced regular tomatoes can substitute
  • 1 medium avocado optional
  • 1/2 medium red onion or green onions
  • 1/2 cup feta cheese optional, can use cotija

Method
 

Preparation
  1. In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper until smooth.
  2. Place the flank steak in a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 30 minutes.
  3. Prepare the rice according to package instructions.
  4. Warm black beans in a small saucepan over medium heat for about 5 minutes. Stir occasionally.
  5. Cook fresh corn by boiling or sautéing until tender, about 5 minutes, or microwave frozen corn until warmed.
  6. Preheat grill or grill pan to medium-high heat, about 375-400°F.
  7. Grill the marinated flank steak for about 4-5 minutes on each side until medium-rare, reaching an internal temperature of 130°F.
  8. Let the steak rest for 5-10 minutes before slicing against the grain into thin strips.
  9. In serving bowls, layer rice, black beans, corn, sliced steak, tomatoes, avocado, and onion, then top with feta if desired.
