Ingredients

For the Bread
  • 3 ripe bananas Adds natural sweetness and moisture; use overripe bananas for the best flavor.
  • 1/2 cup granulated sugar Provides sweetness; can reduce to 1/3 cup for less sweetness.
  • 1/4 cup brown sugar, packed Enhances the caramel-like flavor; dark brown sugar can be used for richer flavor.
  • 1/2 cup unsalted butter, melted Fats provide richness; can substitute with vegetable oil or applesauce for a lighter version.
  • 2 large eggs Binds ingredients and adds richness; use flax eggs for a vegan alternative.
  • 1 teaspoon vanilla extract Enhances sweetness and aroma; optional but recommended for depth of flavor.
  • 1 teaspoon baking soda Leavens the bread; ensure it is fresh for best results.
  • 1/2 teaspoon salt Balances sweetness and is essential for flavor enhancement.
  • 1 1/2 cups all-purpose flour Provides structure; can use whole wheat flour for a healthier option.
  • 1 tablespoon cinnamon Adds traditional cinnamon roll flavor; adjust based on personal taste.

  • 1/4 cup granulated sugar Used to create the cinnamon sugar mixture for layering.
For the Glaze
  • 1/2 cup powdered sugar Sweetens and coats the finished bread; can omit for a less sweet option.
  • 1-2 tablespoons milk Thins the glaze for drizzling; can substitute with any milk alternative.

Equipment

  • Loaf pan
  • Mixing bowl
  • Whisk
  • knife or skewer

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or non-stick spray.
  2. In a large bowl, mash the ripe bananas until smooth, then whisk in granulated sugar, brown sugar, melted butter, eggs, and vanilla extract until creamy.
  3. Sprinkle baking soda and salt over the mixture. Gently fold in the flour until just combined; a few flour streaks are okay.
  4. In a small bowl, mix together the granulated sugar and cinnamon for the swirl. Set aside.
  5. Pour half of the batter into the loaf pan, sprinkle half of the cinnamon sugar, add the remaining batter, and top with the rest of the cinnamon sugar.
  6. Gently swirl through the batter with a knife to create a marbled effect without fully mixing it.
  7. Bake in the oven for 50-60 minutes or until a toothpick inserted comes out clean and the top is golden brown.
  8. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  9. Whisk together powdered sugar and milk for glaze, adjusting consistency as needed.
  10. Once cooled, drizzle the glaze over the bread and enjoy!
