Step-by-Step Instructions
  1. In a large mixing bowl, combine the oat flour, maple syrup, whole egg, and egg whites. Whisk vigorously until smooth and lump-free. Let the batter rest for about 5 minutes.
  2. Preheat a non-stick skillet over medium heat and lightly oil it. Pour 1/3 cup of batter into the skillet, swirling it to spread evenly. Cook for 1-2 minutes, flip, and cook for another 1-2 minutes until golden brown.
  3. In a separate bowl, mix Greek yogurt, granular sweetener, and ground cinnamon until smooth for the filling.
  4. Remove each crepe carefully and spread a layer of the cinnamon yogurt filling on one side. Roll it up tightly and place seam-side down.
  5. Mix together the remaining sweetener and ground cinnamon. Dust this mixture over the warm crepes before serving.
