Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and prep the baking dish.
  2. In a large bowl, toss the diced butternut squash with olive oil, salt, black pepper, and garlic powder until evenly coated. Spread in a baking dish.
  3. Place the baking dish in the preheated oven and roast the squash for 20-25 minutes until tender and starting to brown.
  4. In a medium saucepan, bring vegetable broth to a boil. Add orzo, reduce heat, and simmer for 8-10 minutes until al dente.
