Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare your ingredients.
  2. Season both sides of the chicken breasts with salt, pepper, thyme, oregano, and basil.
  3. In a skillet over medium-high heat, heat olive oil and sear chicken for 2-3 minutes per side.
  4. Melt butter in the same skillet, add mushrooms, and sauté for 5-7 minutes.
  5. Add fresh spinach and cook just until wilted, about 2-3 minutes.
  6. In a mixing bowl, combine cream cheese, heavy cream, parmesan, and chicken broth. Whisk until smooth.
  7. In a baking dish, layer the chicken, followed by mushrooms and spinach. Pour creamy sauce over.
  8. Bake for 20-25 minutes, or until chicken reaches 165°F (74°C).
  9. Allow dish to cool for a few minutes before serving.
