Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté the diced onion and minced garlic for about 3-4 minutes until fragrant.
  3. Add ground turkey to the skillet, cook for 5-7 minutes until browned, and drain any excess fat.
  4. Stir in diced sweet potatoes, sliced zucchini, smoked paprika, Italian seasoning, salt, and pepper, and sauté for another 5-7 minutes.
  5. Transfer the mixture to the greased baking dish and spread it evenly.
  6. Sprinkle shredded cheese over the turkey and vegetable mixture.
  7. Bake for 25-30 minutes or until the sweet potatoes are tender and the cheese is golden brown.
  8. Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley before serving.
