Step-by-Step Instructions for Tomato Enoki Mushroom Soup
  1. Heat a medium pot over medium heat and add a drizzle of neutral oil. Once shimmering, add minced ginger and garlic, sautéing for about 2 minutes.
  2. Increase heat to medium-high, then add the lean ground beef. Stir frequently, cooking until browned, around 5 minutes.
  3. Stir in the tomato paste and continue to cook for an additional 2 minutes until it darkens slightly.
  4. Pour in low-sodium chicken stock, sugar, salt, ground white pepper, and white vinegar. Gently stir and add enoki mushrooms and scallion whites. Simmer for 15 minutes.
  5. After 15 minutes, taste and adjust seasoning. Serve in bowls and garnish with green parts of scallions.
