- In a medium bowl, mix 1 cup of cottage cheese with 1 cup of self-rising flour. Stir until a shaggy dough begins to form.
- Lightly dust a clean surface with flour and transfer the dough onto it. Knead gently for about 1-2 minutes until soft.
- Divide the dough into 2-4 equal portions, roll each into a ball, then flatten to about 1/4 inch thick.
- Preheat a nonstick skillet over medium heat. Cook one flatbread for 2-3 minutes until golden brown, then flip and cook for an additional 1-2 minutes.
- Stack the finished flatbreads in a kitchen towel to keep warm until all are cooked.
