Method
 

Step-by-Step Instructions
  1. In a medium saucepan, bring 3 cups of chicken broth to a boil over high heat. Add the wild rice, reduce heat to low, cover and simmer for 45-50 minutes.
  2. In a large pot over medium heat, combine olive oil and unsalted butter. Sauté onions, carrots, celery, and mushrooms for 5-6 minutes. Add garlic in the last 30 seconds.
  3. Sprinkle flour over sautéed vegetables and stir for about 3 minutes to create a roux.
  4. Gradually whisk in 8 cups of chicken broth, bring to a boil, then reduce to a simmer for 15-20 minutes until thickened.
  5. Stir in the cooked wild rice, milk, and half and half; simmer for an additional 10-15 minutes.
  6. Taste and adjust seasoning with salt and pepper before serving. Ladle into bowls and serve warm.
