- Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, nuts, ground cinnamon, ground ginger, ground cloves, and sea salt.
- Melt coconut oil in a small saucepan over low heat and mix in maple syrup, unsulphured molasses, and vanilla extract. Pour over dry ingredients.
- Transfer the mixture onto the prepared baking sheet, spreading evenly and pressing down firmly.
- Bake for about 20 minutes, stirring halfway through until golden and aromatic.
- Allow the granola to cool in the pan for at least 15 minutes to harden into clusters.
- Once cool, break into clusters and store in an airtight container.
