- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Once shimmering, add a medium diced onion and sauté for about 5 minutes until it becomes soft and translucent. Add minced garlic and continue to cook for an additional minute until fragrant.
- Stir in 3 cups of cooked shredded chicken, 2 cans of drained white beans, and 2 cans of diced green chilies. Pour in 4 cups of chicken broth and sprinkle in 2 teaspoons each of ground cumin and dried oregano, alongside 1 tablespoon of chili powder, and salt and pepper to taste. Mix everything thoroughly.
- Increase the heat to medium-high to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and simmer uncovered for about 20 minutes, stirring occasionally.
- Remove from heat and stir in 1 cup of sour cream and 1 cup of shredded cheese. Adjust seasoning to taste.
