  • 2 cans White Beans Drained; use cannellini or great northern beans.

  • 2 cans Diced Green Chilies Substitute with jalapeños for more heat.
  • 4 cups Chicken Broth Low-sodium preferred.
  • 2 teaspoons Ground Cumin Smoked cumin can be used for variation.
  • 2 teaspoons Dried Oregano Italian seasoning can substitute.
  • 1 tablespoon Chili Powder Adjust to taste.

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Once shimmering, add a medium diced onion and sauté for about 5 minutes until it becomes soft and translucent. Add minced garlic and continue to cook for an additional minute until fragrant.
  2. Stir in 3 cups of cooked shredded chicken, 2 cans of drained white beans, and 2 cans of diced green chilies. Pour in 4 cups of chicken broth and sprinkle in 2 teaspoons each of ground cumin and dried oregano, alongside 1 tablespoon of chili powder, and salt and pepper to taste. Mix everything thoroughly.
  3. Increase the heat to medium-high to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and simmer uncovered for about 20 minutes, stirring occasionally.
  4. Remove from heat and stir in 1 cup of sour cream and 1 cup of shredded cheese. Adjust seasoning to taste.
  5. Ladle into bowls and garnish with fresh cilantro and lime wedges.
