  • 1 packet Taco Seasoning Ensure it's gluten-free if store-bought
For the Casserole
  • 2 cups Shredded Cheese A blend of cheddar and Monterey Jack
  • 1 can Drained Black Beans Pinto or kidney beans can be alternatives
  • 1 cup Corn Fresh, frozen, or canned corn are suitable
  • 10 pieces Corn Tortillas Use gluten-free corn tortillas if necessary

Method
 

Cooking Steps
  1. Prepare the Chicken by placing the boneless skinless chicken breasts at the bottom of your crockpot.
  2. Add the Sauces by pouring the red enchilada sauce and fire-roasted tomatoes over the chicken.
  3. Season the Mix by sprinkling taco seasoning over the chicken and sauce mixture.
  4. Set the Cooking Time by covering the crockpot and cooking on low for 4-6 hours or high for 3-4 hours.
  5. Shred the Chicken by using two forks to shred it right in the crockpot.
  6. Mix in Additional Ingredients by stirring in half of the shredded cheese, drained black beans, corn, and tortilla wedges.
  7. Melt the Cheese by sprinkling the remaining cheese on top and cooking for an additional 20-30 minutes.
  8. Serve and Garnish by scooping out the casserole into bowls and adding desired toppings.
