- Preheat your oven to 400°F (200°C) and spray a 6-well muffin pan with cooking spray.
- In a large mixing bowl, whisk together one egg, ¾ cup of milk, and ⅓ cup of canola oil until combined.
- Add in 1 ½ cups of flour, ½ cup of sugar, 2 teaspoons of baking powder, ½ teaspoon of salt, and 2 teaspoons of Vanilla Chai Spice Blend. Mix gently.
- Evenly distribute the batter into the prepared muffin wells, filling each about ¾ full. Sprinkle sanding sugar on top if desired.
- Bake muffins for 18-20 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for about 10 minutes before transferring to a wire rack.
