Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with coconut oil or non-stick spray.
  2. In a large bowl, mix together pumpkin puree, coconut oil, sour cream, and eggs until smooth.
  3. In another bowl, whisk together flour, sugar, baking soda, baking powder, pumpkin pie spice, and salt.
  4. Fold dry ingredients into the wet mixture until just combined.
  5. In a separate bowl, mix cream cheese and sugar until smooth.
  6. Pour half of the pumpkin batter into the pan, spread cream cheese mixture on top, then add remaining batter.
  7. Bake for 48-55 minutes, checking for doneness with a toothpick.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
