  • 240 g Sour Cream Full-fat recommended
  • 80 ml Reduced Apple Cider From boiled cider
  • 1 tsp Cinnamon Adjust to taste
  • 3 large Eggs At room temperature
  • 30 g All-Purpose Flour Can be omitted for gluten-free

Method
 

Step-by-Step Instructions
  1. Boil 720g of fresh apple cider with mulling spices for 30-45 minutes. Reduce to about 1/3 cup and cool.
  2. Preheat oven to 350°F. Grind digestive cookies or graham crackers into crumbs. Mix with melted butter, salt, and powdered sugar. Press into a springform pan and bake for 10 minutes.
  3. Lower oven to 325°F. Blend cream cheese with brown sugar. Add sour cream, vanilla, cinnamon, and reduced cider until smooth.
  4. Incorporate eggs one at a time, mixing gently. Fold in flour until just combined.
  5. Pour filling into crust, place in a water bath, and bake for 80-90 minutes until edges are set.
  6. Cool gradually in the oven with the door ajar for 30 minutes. Transfer to the fridge to chill for at least 8 hours before serving.
