- Boil 720g of fresh apple cider with mulling spices for 30-45 minutes. Reduce to about 1/3 cup and cool.
- Preheat oven to 350°F. Grind digestive cookies or graham crackers into crumbs. Mix with melted butter, salt, and powdered sugar. Press into a springform pan and bake for 10 minutes.
- Lower oven to 325°F. Blend cream cheese with brown sugar. Add sour cream, vanilla, cinnamon, and reduced cider until smooth.
