  • 12 oz Corn Canned, well-drained
  • 1 medium Cucumber Chopped
  • 1 small Red Onion Diced
  • 1/2 cup Feta Cheese or Cotija, optional

Method
 

Step-by-Step Instructions
  1. Make the dressing: In a blender, combine Greek yogurt, cilantro, lime juice, and salt. Blend until smooth.
  2. Cook the pasta according to package directions. Drain and cool under cold water.
  3. Combine cooled pasta with chickpeas, corn, cucumber, and onion in a large mixing bowl. Stir gently.
  4. Drizzle the dressing over the pasta and toss gently to coat all ingredients.
  5. Sprinkle feta cheese over the salad and toss gently again.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
