  • 8 oz Neufchatel Cheese or light cream cheese or Greek yogurt
  • 1/4 cup Light Brown Sugar or Monk Fruit Brown Sugar
  • 1 tsp Ground Cinnamon adjust to taste
  • 1/4 tsp Ground Nutmeg optional
  • 1/2 cup Light Sour Cream or Greek yogurt
  • 1 tsp Vanilla Extract preferably pure vanilla
For the Fruit
  • 3 cups Crisp, Sweet Apples (Gala, Jazz, Golden Delicious) diced
  • 1 cup Cold Water for soaking
  • 1 tbsp Fresh Lemon Juice for soaking
For the Crunch
  • 1 cup Fishers Walnuts or pecans or almonds
  • 1/2 cup Dried Cranberries or raisins or chopped dates

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the Neufchatel cheese, light brown sugar, ground cinnamon, and optional nutmeg. Whip these ingredients using an electric mixer on medium speed for about 3 minutes, or until the mixture is light and fluffy. Gradually blend in the light sour cream and vanilla extract, then cover the bowl and place it in the refrigerator to chill while you prepare the fruit.
  2. In a separate bowl, mix together cold water and fresh lemon juice. Dice your choice of crisp, sweet apples into cubes, and immediately transfer them into the lemon mixture to prevent browning. Allow the apples to soak for about 3–5 minutes, then drain them on paper towels to remove excess liquid.
  3. In a large mixing bowl, gently combine the soaked apple cubes with about three-quarters of the Fishers walnuts and dried cranberries. Pour the chilled dressing over the apple mixture and fold everything together until the apples are evenly coated with the creamy dressing.
  4. Transfer the creamy apple salad to a serving dish, and then sprinkle the remaining walnuts and cranberries on top for added texture and visual appeal. If desired, chill the salad further in the refrigerator for 15–30 minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Prepare the dressing a day before, but add the apples just before serving.
