Step-by-Step Instructions
  1. Heat olive oil in a large pot over medium heat. Add minced garlic and sliced red bell pepper. Sauté for 2-3 minutes until fragrant.
  2. Pour in the coconut milk and stir well. Bring to a simmer over medium heat.
  3. Add fish sauce (or soy sauce), salt, and pepper. Squeeze in lime juice and allow to simmer for another 3-4 minutes.
  4. Add white fish fillets cut into chunks, cover the pot, and cook for 6-8 minutes until fish is cooked through.
  5. Turn off heat and sprinkle chopped cilantro over the stew. Adjust seasoning as desired.
  6. Serve warm with jasmine rice or naan.
