- Heat olive oil in a large pot over medium heat. Add minced garlic and sliced red bell pepper. Sauté for 2-3 minutes until fragrant.
- Pour in the coconut milk and stir well. Bring to a simmer over medium heat.
- Add fish sauce (or soy sauce), salt, and pepper. Squeeze in lime juice and allow to simmer for another 3-4 minutes.
- Add white fish fillets cut into chunks, cover the pot, and cook for 6-8 minutes until fish is cooked through.
