  • 4 cloves garlic minced
  • 1 tsp smoked paprika or regular paprika for milder taste
  • 1 tsp Cajun seasoning substitute with Creole seasoning if desired
  • 1/2 tsp crushed red pepper can be omitted for milder flavor
  • 1 tbsp tomato paste
  • 1/4 cup white wine dry varieties preferred
  • 1/2 cup heavy cream or half-and-half for lighter version
  • 1 tsp lemon juice freshly squeezed preferred
  • 1 tbsp fresh parsley chopped for garnish
  • salt to taste
  • black pepper to taste

Method
 

Step‑by‑Step Instructions
  1. In a large sauté pan, melt 2 tablespoons of unsalted butter alongside 1 tablespoon of extra virgin olive oil over medium heat for about 1 minute.
  2. Add 4 cloves of minced garlic to the pan and sauté for approximately 30 seconds until fragrant and lightly golden.
  3. Sprinkle in 1 teaspoon of smoked paprika, 1 teaspoon of Cajun seasoning, and ½ teaspoon of crushed red pepper, stirring for about 1 minute.
  4. Incorporate 1 tablespoon of tomato paste, stirring to blend it into the seasoned oil and cook for an additional minute.
  5. Pour ¼ cup of dry white wine into the pan and simmer for about 2-3 minutes, stirring occasionally.
  6. Lower heat to medium and gradually stir in ½ cup of heavy cream, allowing to simmer for 2-3 minutes.
  7. Season the sauce with salt and black pepper, then gently add the crab claws, tossing to coat.
  8. Finally, stir in 1 teaspoon of freshly squeezed lemon juice and 1 tablespoon of chopped fresh parsley before serving immediately.
