Step-by-Step Instructions
  1. Boil a large pot of water. Cook frozen udon noodles according to package instructions, about 4-5 minutes. Reserve 1/2 cup of noodle water, drain, and rinse with cold water.
  2. Melt butter in a large skillet over medium heat. Add minced garlic and chopped shallots, sauté for 2 minutes until fragrant and translucent.
  3. Stir in gochujang and cook for 30 seconds. Gradually pour in heavy cream and reserved noodle water, stirring until combined. Add soy sauce and gochugaru; simmer for 3-5 minutes until thick.
  4. Add cooked udon noodles to the skillet and gently toss for 1-2 minutes until coated with the sauce.
  5. Serve in bowls, garnishing with grated parmesan, chopped green onions, and egg yolk if desired. Enjoy hot.
