- Boil a large pot of water. Cook frozen udon noodles according to package instructions, about 4-5 minutes. Reserve 1/2 cup of noodle water, drain, and rinse with cold water.
- Melt butter in a large skillet over medium heat. Add minced garlic and chopped shallots, sauté for 2 minutes until fragrant and translucent.
- Stir in gochujang and cook for 30 seconds. Gradually pour in heavy cream and reserved noodle water, stirring until combined. Add soy sauce and gochugaru; simmer for 3-5 minutes until thick.
- Add cooked udon noodles to the skillet and gently toss for 1-2 minutes until coated with the sauce.
- Serve in bowls, garnishing with grated parmesan, chopped green onions, and egg yolk if desired. Enjoy hot.
