Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and dry the baby potatoes thoroughly, then place them on a lined baking sheet in a single layer.
  2. Drizzle potatoes with olive oil, then sprinkle with salt and pepper. Roast for 35-40 minutes until golden brown and fork-tender, stirring halfway through.
  3. In a skillet over medium heat, melt butter with olive oil. Add shallots and sauté for 3-4 minutes until soft and fragrant.
  4. Add minced garlic to the shallots, cooking for an additional minute. Pour in broth and simmer until slightly reduced.
  5. Whisk in both mustards, seasoning with salt and pepper. Let reduce further for about 5 minutes.
  6. Stir in heavy cream until smooth. Mix cornstarch with water to form a slurry and incorporate into the sauce, cooking until thick.
