Step-by-Step Instructions
  1. In a large pot, pour in 4 cups of vegetable broth and bring it to a gentle simmer over medium heat.
  2. Once the broth is simmering, add 1 cup of orzo and 2 cups of chopped broccoli to the pot. Stir well and keep the heat at medium. Cook for about 15 minutes, stirring occasionally.
  3. Reduce heat to low and stir in 1 cup of heavy cream and 1 to 1.5 cups of shredded cheddar cheese. Keep stirring for about 3-5 minutes until combined.
  4. Taste and season with salt and pepper to suit your preferences.
  5. Check consistency; if too thin, simmer for a few more minutes or use a cornstarch slurry.
