  • 1 cup Heavy Cream Greek yogurt can lighten the dish
  • 4 cups Chicken or Vegetable Broth Opt for low-sodium
  • 1 tsp Dried Thyme Italian seasoning can be an alternative
  • Salt Add to taste
  • Pepper Add to taste
  • Gnocchi Store-bought or homemade

Instructions
  1. In a large pot heated over medium heat, add Italian sausage and cook for 5–7 minutes until browned. Drain excess fat.
  2. Add a drizzle of olive oil if needed. Sauté minced garlic and diced carrots for about 3 minutes until fragrant.
  3. Pour in chicken or vegetable broth and bring to a gentle simmer for approximately 5 minutes.
  4. Add the gnocchi and cook for 2–3 minutes until they float to the surface.
  5. Stir in fresh spinach and heavy cream. Simmer for an additional 2 minutes until spinach wilts.
  6. Return browned sausage to the pot, add dried thyme, salt, and pepper. Simmer gently for another 5 minutes.
  7. Ladle soup into bowls and serve warm with crusty bread or a fresh salad.
