- In a large pot heated over medium heat, add Italian sausage and cook for 5–7 minutes until browned. Drain excess fat.
- Add a drizzle of olive oil if needed. Sauté minced garlic and diced carrots for about 3 minutes until fragrant.
- Pour in chicken or vegetable broth and bring to a gentle simmer for approximately 5 minutes.
- Add the gnocchi and cook for 2–3 minutes until they float to the surface.
- Stir in fresh spinach and heavy cream. Simmer for an additional 2 minutes until spinach wilts.
- Return browned sausage to the pot, add dried thyme, salt, and pepper. Simmer gently for another 5 minutes.
- Ladle soup into bowls and serve warm with crusty bread or a fresh salad.
