Cooking Steps
- Heat olive oil in a large soup pot over medium-high heat. Add chicken and season with Italian seasoning, salt, and pepper. Brown for 4-5 minutes.
- Add chopped onion, carrot, and celery into the pot and stir. Cook for 3-4 minutes until vegetables are translucent. Add sun-dried tomatoes and minced garlic, cooking for another minute.

- Remove lid and stir in heavy cream and fresh spinach. Simmer for an additional 5 minutes until spinach is wilted.
- Taste and adjust seasonings. Stir in grated Parmesan cheese until melted. Serve warm in bowls.
