Method
 

Cooking Steps
  1. Heat olive oil in a large soup pot over medium-high heat. Add chicken and season with Italian seasoning, salt, and pepper. Brown for 4-5 minutes.
  2. Add chopped onion, carrot, and celery into the pot and stir. Cook for 3-4 minutes until vegetables are translucent. Add sun-dried tomatoes and minced garlic, cooking for another minute.
  3. Sprinkle flour over the mixture and stir to coat. Optionally, add tomato paste and mix for about a minute.
  4. Gradually whisk in chicken broth while stirring. Bring to a gentle boil. Allow the soup to thicken.
  5. Stir in pasta, Italian seasoning, salt, and pepper. Cover and simmer for about 20 minutes until pasta is al dente and chicken is cooked through.
  6. Remove lid and stir in heavy cream and fresh spinach. Simmer for an additional 5 minutes until spinach is wilted.
  7. Taste and adjust seasonings. Stir in grated Parmesan cheese until melted. Serve warm in bowls.
