Step-by-Step Instructions
  1. Heat a skillet over medium-high heat and add the ground beef. Sauté for about 5-6 minutes until browned, breaking it apart with a spatula. Drain any excess grease, then stir in the taco seasoning along with the required water. Simmer until the liquid evaporates and the mixture thickens, about 2-3 minutes.
  2. Take a stack of corn tortillas and wrap them in a damp paper towel. Microwave them for 1 minute to soften, making them pliable for folding.
  3. Take half of the softened tortillas and fill them with the seasoned ground beef mixture and a sprinkle of shredded cheddar cheese. Carefully fold each tortilla in half to form a taco shape. For extra stability, brush the outside of each taco lightly with olive oil.
  4. Arrange the tacos in the air fryer basket, ensuring they're not overcrowded. If necessary, use toothpicks to secure them closed. Set the air fryer to 400°F for 8 minutes, flipping halfway through.
  5. Once the first batch is complete, carefully remove the tacos from the air fryer and set them aside. Repeat the same assembly and cooking process with the remaining tortillas and filling.
