  • 1 pound Ground beef can substitute with ground turkey or chicken
  • 1 packet Taco seasoning homemade or store-bought
  • 1 cup Red enchilada sauce or green enchilada sauce for variety
For the Cheese
  • 1 cup Oaxaca cheese or Mexican cheese/Monterey Jack
For the Taco Shell
  • 8 pieces Corn tortillas or flour tortillas for a different texture
For the Crispiness
  • 2 tablespoons Olive oil can substitute with vegetable or canola oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F.
  2. In a large skillet over medium-high heat, cook the ground beef for 5-7 minutes until fully cooked.
  3. Stir in taco seasoning and red enchilada sauce and simmer for 2-3 minutes.
  4. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds.
  5. Brush one side of each tortilla with olive oil and arrange on a baking sheet.
  6. On each tortilla, sprinkle a layer of Oaxaca cheese and a spoonful of the beef mixture.
  7. Fold each tortilla to form a taco shape and press gently to keep closed.
  8. Bake for 16 minutes until crispy and golden brown.
  9. Cool for about 3 minutes before serving with dips like salsa or guacamole.
