  • 1 pound lean ground beef or ground turkey for a lighter option
  • 1 packet taco seasoning use homemade for customization
  • ¾ cup red enchilada sauce or green for a twist
For the Tacos
  • 1 cup Oaxaca cheese or Monterey Jack for different flavor
  • 6 pieces corn tortillas flour tortillas can be used
  • 1 tablespoon olive oil can substitute with canola oil

Method
 

Cooking Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a large skillet over medium-high heat, cook the beef until browned, about 5-7 minutes. Add taco seasoning and enchilada sauce, simmer for 2-3 minutes.
  3. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds to soften.
  4. Brush one side of each tortilla with olive oil, then assemble with cheese and beef mixture.
  5. Arrange tacos on a baking sheet and bake for about 16 minutes until crispy and golden.
  6. Let the tacos cool for about 3 minutes before serving with your favorite dips.
